Ingredients

  1. 8ripe Thai bananas (use 6 for mashing, reserve 2 for decoration)
  2. 1/3 cuprice flour (50 grams)
  3. 1/3 cuparrowroot flour (or substitute with tapioca starch) (40 grams)
  4. 1/3 cuptapioca starch (40 grams)
  5. 1 cupcoconut milk (250 grams)
  6. 1/3 cuppalm sugar (60 grams)
  7. 1/3 cupgranulated sugar (60 grams)
  8. 1 teaspoonsalt (5 grams)

Steps

  1. 1

    Mash 6 of the bananas. Set aside the remaining 2 bananas for decorating.

    In a mixing bowl, combine the rice flour, tapioca starch, and arrowroot flour (or extra tapioca starch if substituting).

    Gradually add the coconut milk to the flour mixture, mixing and kneading until smooth and well combined.

    In a separate bowl, mix the palm sugar, granulated sugar, and salt with the remaining coconut milk. Stir until the sugars dissolve. Add this mixture to the dough from step 3 and knead until fully combined. (For a smoother texture, you can strain the batter.)

    Add the mashed bananas from step 1 to the batter and mix well.

    Lightly grease your molds. Slice the remaining 2 bananas into rounds and place a slice in the center of each mold. Pour the batter from step 5 into the molds.

    Steam the filled molds over boiling water for 20 minutes. Remove from the molds, arrange on a plate, and serve.
