Coconut milk pudding is one of the commonly used sweet in almost every place and too in the occasion of festival like dussehra, diwali and so on...........
It’s not just the creativity, it’s the imagination and effort which helped me to execute and recreate this dessert of Michelin starred chef. Thinking on a versatile way I gave my own twist to this edible bird's nest.

This "EDIBLE BIRD'S NEST" contains 'COCONUT MILK PUDDING' representing the Eggs, cooked and fried spaghetti representing the Nest , Designated coconuts resembles the SNOWY TEXTURE, and the biscuit crumbs scattered on the plate is the SOIL DIRT LOOK, and to finish this stunning eggs nest garnished with GREEN SUGAR CRYSTAL , YELLOW SUGAR CRYSTALS, and FROZEN GRAPES, and the choco stick filled with grapes syrup represents TREE LOGS.

Ingredients

2 servings
  1. For the coconut milk pudding:
  2. 1/2 cupCoconut milk
  3. 11/2 cupMilk
  4. 4no’s Cardamom
  5. 2 dropsVanilla essence
  6. 2 tspSugar
  7. 1 1/2 tsp.Gelatin (powdered)
  8. For the tree logs:
  9. 2medium Chocolate stick
  10. 1/4 cupBlack grapes
  11. 2 tbsp.Brown sugar
  12. 2no's Cardamom
  13. 3Oreo biscuits (dark soil)
  14. For the edible bird's nest soil:
  15. 4Ginger biscuits crumbs (or any other chocolate biscuits)
  16. 10Ordinary biscuits (for the light colored soil)
  17. 2 tbsp.Powdered sugar
  18. For the grapes gel:
  19. 1/4 cupBlack grapes (usually used as coloring agent)
  20. 2 tbsp.Sugar
  21. 3 dropsVanilla essence
  22. 2 tbsp.Brown sugar
  23. 1/4 tbsp.Gelatin (as per the quantity)
  24. For the edible birds nest:
  25. 1 packSpaghetti
  26. 1/4 cupButter (or oil)
  27. to tasteSalt
  28. For the colored sugar glass:
  29. 1/2 cupSugar
  30. 1 tbsp.Green food colour
  31. 1 tbsp.Yellow food colour
  32. For garnishing:
  33. 1/4 cupCoconut (grated) heated and refrigerated
  34. 3 tbsp.Black grapes
  35. 2no's Flower (pink coloured)
  36. 1 tbsp.Sugar Powder

Steps

    For the coconut egg pudding:

    In a large bottomed pan add in the coconut milk and gelatin and stir well.

  3. 3

    Stir the above mixture until the gelatin (powdered/gelatin sheets) dissolves well in the coconut mixture and set aside.

  4. 4

    In the separate sauce pan add milk, cardamom.vanilla and powdered sugar and the brown sugar and mix well.

  5. 5

    Turn on the heat and let it combine well in low heat.

  6. 6

    Do not let the milk gelatin mixture come to boil. And stir well.

  7. 7

    Once the milk mixture dissolves the sugar add in the coconut and gelatin mixture in to the pan and combine well.

  8. 8

    Stir for about 4-5 minutes and take out of heat. Stir for about 3 to 4 kin and let it rest in a room temperature.

  9. 9

    For the birds nest: Taking any of the shaped molds (similar to birds nest) is okay...must be in a circular shape.

    In a large pan add in the spaghetti pack and salt to taste and let it boil for about 6 to 8 minutes in medium heat.

    Add in 2 tsp. of oil to the boiling mixture(in order to avoid sticking together of spaghetti to one another)

    In a frying pan add oil and heat it.

  13. 13

    Make the boiled spaghetti to the reacquired nest shape on a separate bowl and immerse into the oil pan.

  14. 14

    Fry the spaghetti till it gets the light golden brown as required. And keep aside.

    For the grape (gel) :
    In a large bottomed pan, add in the grapes extracted and stir well on a low heat.

    Once mixture starts to heat up add sugar powder and stir well.

  17. 17

    Add vanilla essence and cardamom and mix well.

  18. 18

    Stir on a low heat for about 5- 6 minutes and reduce to certain level.

  19. 19

    Add cornstarch and stir well for 2 to 3 minutes. and set aside

  20. 20

    For the sugar crystal:
    In a large pan add water and heat it up.

    Add in the sugar on medium heat and keep stirring well.

  22. 22

    Once the sugar dissolves on the process, keep an curious eye on the sugar mixture, so that it doesn’t burn out.

    Then add in the required food colour and let to caramelize. Once the sugar caramelizes pour in the mixture on butter paper and give the reacquired shape.

    Allow the mixture to cool on room temperature.

    Once it settles down allow it on to refrigerate.

    For the coconut snow:

    In a bowl add grated coconut and add cinnamon and cardamom powder(a pinch)

    Mix well and add sugar to it.

    Mix the mixture and froze it overnight till it sets well.

    Once the mixture is set and frozen blend it in blender to form a powder and a snowy texture.

    For the Tree Log:
    Fill the Choco Sticks with prepared grape gel and froze overnight. Till it sets well.

    For the presentation makeover:

    Place the dirt soil (crumbled biscuits..) on the center of the plate and decorate to the level.

    Then place the birds nest on top.

    Place the de molded eggs (coconut milk pudding) on the nest.

  36. 36

    Side up the nest with medium sized biscuits crumbs in a decorative manner.

  37. 37

    Add the sugar crystal (glass) on the top of crumbs.

  38. 38

    Place the frozen grapes in garnishing way.
