Steps

Blanch spinach in boiling water for 2 minutes. Strain and put into chilled water for sometime. Then squeeze it.

Grind blanched spinach, chopped coriander leaves, garlic cloves, green chillies, chopped green part of spring onion with lemon juice and little water in mixer grinder and make smooth paste. Keep aside.

Boil potatoes, green peas, cauliflower and lauki in pressure cooker. Then mash with masher.

In a pan heat oil and ghee.

When heated add chopped green tomatoes and saute well till tomatoes turns soft.

Add chopped spring onion (white part) and saute it.

Add chopped capsicum and saute for sometimes.

Add boiled and mashed vegetables and enough water.

Add salt, red chilli powder and bhaji Pau masala. Mix well and cook for 3-4 minutes.

Now add ground green paste and mix well. Cook for 3-4 minutes. Adjust consistency with water.

Yummy green bhaji pav is ready to serve.

Enjoy hot with bun roasted with butter. serve with chopped onion and lemon.
