Ingredients

  • Fragrant chilli oil:
  • 1 piece(about 3 cm) cinnamon stick
  • 3star anise
  • 2 stalkspring onion, cut into section
  • 5 slicesginger
  • 2 Tbspdried chilli flakes
  • 1 kgspare ribs, cut into smaller pieces
  • 1 Tbspcorn starch
  • 1 tspsalt
  • Ingredients:
  • 3 tbspchopped garlic
  • 3 tbspchopped ginger
  • 5dried chillies, soaked and cut into pieces
  • 1 tspszechuan peppercorn
  • 1 tsppreserved Black bean, washed and chopped
  • 1 tspsugar
  • 3 tbspwater
  • Some coriander leaves, to serve

Steps

    Fragrant chilli oil: heat up about 5 tbsp of oil in wok, add in cinnamon stick and star anise and cook in low heat till fragrant. Add in spring onion, ginger and cook till aromatic. Then pour the hot chilli oil into the dried chilli flakes and mix well, set aside

  2. 2

    Mix spare ribs with corn starch and salt. Marinate for 30 minutes

  3. 3

    Heat up 1 Tbsp oil, saute chopped garlic, ginger, dried chillies, szechuan peppercorns till fragrant. Add in preserved Black bean and bean paste and stir fry till aromatic. Add sugar, water and mix well. Remove from heat and spread over the ribs

  4. 4

    Drizzle 2-3 tbsp of the fragrant chilli oil over the ribs and steam at high heat for 20 minutes

  5. 5

    Once cooked, remove from heat, sprinkle coriander leaves on top and serve immediately
