Firstly, in a bowl take flour and ghee

Crumble and mix well

Now add water and knead a smooth and soft dough

Cover and rest the dough for 15 minutes

After 15 minutes, knead the dough again for 1 minute

To make paste, mix rice flour, ghee and oil and make a smooth paste

On the kitchen counter, sprinkle little flour

Pinch a dough ball and roll it thin on the counter

Make 4 thin rotis like this

Apply the prepared paste on first roti

Keep the second on top of this

Apply the paste again

Keep the third roti on top

Again apply the paste on third roti amd keep the fourth roti on top

Roll this into a log

I made 8 rotis out of this dough and 2 logs

Now with a knief cut the log diagonally

Now take each piece and press it lightly on your palm

Heat oil for deep frying in a kadai

Deep fry all the khaja on low flame till goldem brown and crisp

Meanwhile make sugar syrup

In a pan add water and sugar

Boil the sugar syrup until 1 string consistency is attained

Switch off the flame and keep aside

When khaja becomes goldem brown and crisp, remove from oil and drop the khaja in sugar syrup

Let it soak in warm syrup for 5 minutes

Drain these and arrange on a plate
