Ingredients

  • Meatballs
  • 1 lbGround Beef
  • 1 1/2 TbspParsley
  • 2/3 Cupgrated Parmesan
  • 1/3 Cupground pork rinds
  • 1Egg
  • 1 tspKosher salt
  • 1/2 tspblack pepper
  • 1/2 tspgarlic powder
  • 1/2 tspminced onion
  • 1/2 tsporegano
  • Parmigana
  • 1 CupLow Carb marinara sauce
  • 4 ozMozzarella

Steps

  1. 1

    Combine all of the meatball ingredients in a large bowl and mix well.

  2. 2

    Form into 2″ meatballs

  3. 3

    Bake at 350 degrees (F) for 20 minutes OR fry in a large skillet over medium heat until cooked through. Frying generally produces a better color and crust.

  4. 4

    Place the cooked meatballs in an oven safe dish.

  5. 5

    Spoon approximately 1 Tbl sauce over each meatball.

  6. 6

    Cover with approximately 1/4 oz of mozzarella cheese each.

  7. 7

    Bake at 350 degrees (F) for 20 minutes or until heated through and the cheese is golden.
