Steps

Firstly make paste of garlic, ginger and green chillies in griddle. Dont make a fine paste, textute should be bit coarse.

Finely chop onions, tomatoes and capsicum.

Now take a shallow pan or tawa. Heat 1 tbsp butter (oil will also do). Add 1 tsp cumin and let them splutter.

Now add green chillies, garlic and ginger paste. Fry till raw smell of ginger is goes away.

Add chopped onions and fry till they are translucent or turns slightly brown.

Now add chopped tomatoes and mix well. Add some salt to make tomatoes cook fast.

Once tomatoes turns mushy add turmeric power, red chilli powder and pav bhaji masala. Add pav bhaji masala as per your taste. Mix well with onion and tomatoes. Let it cook for 2-3 mins.

Now add capsicum to the mixture and cook for 2 mins. Season with salt as per your taste.

Add 1 cup water or as per the consistency. Cook well with all the ingredients. Don't add too much water otherwise masala will make pav soggy. Cook untill it becomes thick gravy. Add coriander for granish.

Now take tawa add some butter or oil. Add some cooked masala and fry in butter. Shift the masala to the side of tawa and take pav and let it absorb some butter or oil on the tawa.

You can add additional butter if you want. You can toast the butter or keep it as is. Now add the masala on the tawa inside the pav evenly and on top of the pav.

Masala pav is ready to serve. Make with rest of the pav. Place it on serving plate with finely chopped onions and lemon. Serve it hot.
