Fluffy vanilla cake

Set your oven to 180°c and leave to heat up. Grease your pan with butter and flour then set aside

In a bowl sieve in the flour, baking powder and salt, set aside

In another bowl, put the butter, oil and sugar then whisk till very white and fluffy, it will taste abit like ice-cream by the time you add your vanilla.

Add your eggs one at a time while whisking. Pour in a little of the flour with a little of the buttermilk and fold in. Keep alternating till both the flour and buttermilk finish

Mix till there is no flour lump. You can divide into two and pour into your 8 inch pan. Bake for 40mins or till your skewer comes. Out clean.
