Marinate the chicken breast. flatten it and pan fry for 4-6 mins on each side until golden brown and properly cooked. put aside and let it cool.

Wash and Peel the cucumber, cut into 2 and remove the seeds.slice into semi discs. Place on a sieve and pour salt and leave to drain the water out.

Wash the tomatoes.and cut into quarters.

Wash the lettuce and dry off excess water. shread into bite size pieces and plave in a mixig bowl

Slice the chicken into long slices. Add the tomatoes,cucumber and chicken to the bowl with lettuce. add finely chopped coriander. mix nicely but do no overhandle.

For the dressing mix the lemon juice,oil,salt and blackpepper. if too sttong some water can be added. can be served in the salad or by the side
