Baingan Bharta is the dish which is prepared with charred and mashed eggplant cooked with spiced onions and tomatoes, and is a very flavorful dish. Traditionally bharta is made with charcoal roasted eggplant but here in US due to smoke alarms I have no other option of using modern kitchen. This is a very popular dish in Punjab usually served with roti.

Take Charred baingan.
Heat a wok,add oil, onions and ginger. - 2
When onions get sauted and colour changed to translucent, Add tomatoes and cook it till oil gets separated.

Add mashed brinjal and peas to prepared tadka and let it cook on low flame.

Add salt, kashmiri red chilli, garam masala and let it simmer for a minute or two.
Peel the skin of eggplant and mash it properly. If seeds are in excess, remove it. - 5
When all the oil gets separated and brinjal get cooked switch off the flame and add coriander.
