I made these using leftovers and a few things I had at home.

Cut the pepper in half and clean it well. Place both halves on a baking sheet lined with parchment paper. Brush with oil and sprinkle with salt. Roast for 30 minutes at 350°F (180°C).

While the pepper is roasting, prepare the filling. In a skillet with a little oil, sauté the diced onion. When it starts to turn translucent, add the garlic and mushrooms. Once cooked, add the bacon. When everything is ready, pour in a good splash of white wine and stir until it evaporates.

Add the heavy cream, Parmesan cheese, and black pepper. Stir over low heat, mixing constantly so it doesn't stick.

Take the pepper out of the oven. Check with a knife to see if it's soft. If not, return it to the oven in 10-minute intervals until tender.

Fill the pepper halves with the mixture. Since the filling is already cooked, bake for another 20 minutes or until the filling is set.
