Salt-Baked Fish and Vegetables

Preheat the oven to 350°F (180°C).

Season the inside of the fish with your choice of ingredients (such as lemon, butter, salt, ginger, etc.).

Spread a layer of coarse salt about 1/4 inch (5 mm) thick on the bottom of the baking dish. Place the fish (for example, tilapia) on top, then cover the entire fish with more salt.

Arrange the vegetables around the fish as shown in the picture.

Sprinkle salt and drizzle olive oil over the vegetables.

Cover everything with aluminum foil.

Bake in the oven at 350–400°F (180–200°C) for 30–40 minutes.
