These dumplings are made from fenugreek leaves and gram flour and spices.. steamed or fried. Muthi in gujarati..means fist..as they shaped mostly into cylinderical rolls with fingers...hence dish named Muthiya.Round shapes methi muthiya are used for making subzi like undhiyo, papdi- muthiya subzi..etc.
Many variables muthiya are made like dhudhi muthiya, bajra- methi muthiya, palak muthiya....etc.. depending on main ingredient used...and are consumed as hot appetizers.
Here methi muthiyas are made for using in subzi.(Undhiyo)

Ingredients

30 mins
40-45 pieces
  • 2 cupchopped fenugreek leaves (methi bhaji)
  • 1 cupgram flour (besan)
  • 1 cupwheat flour
  • 4 tbspgreen chillies- ginger-garlic paste (use spicy chillies)
  • 4 tbspsugar
  • 1 tspturmeric powder
  • 2 tspred chilli powder
  • 1lemon juice
  • 5 tbspoil
  • 1 pinchsoda bi carb
  • to tasteSalt
  • Oil for frying

Steps

30 mins
  1. 1

    Finely chopped fenugreek leaves. Soak them for 5 mins in a bowl of water add a pinch of salt. Strain and use.

  2. 2

    In mixing bowl,add both flours, fenugreek leaves, green chillies ginger and garlic paste, turmeric powder red chilli powder,salt & sugar. Add oil & soda bi carb also., squeeze lemon juice on it.

    Bind in soft dough,if needed add water.

    Make 40-45 equal size round balls.

    Cylindrical roll shape muthiya

    Heat oil in frying pan, drop few prepared balls at a time in hot oil.

    Deep fry in hot oil on medium flame till golden brown in colour.

    Cool and store in airtight container.Use as required in making subzi. They remain fresh for 1 week.
