Steps

First wash all vegetables then roast eggplant & peel the cover of garlic & keep aside.

Process of roasting eggplant in open gas flame for perfect taste.

Peel garlic then cut each clove of garlic in half then make 8 small slits in baigan & insert the garlic cloves in eggplant.

Roast eggplant in low flame about 15 minutes for all sides.

When it get cool then peel the skin of roasted eggplant through hands & with the help of water.

Through water eggplant skin get easily removed then roasted Bharta keep aside.

Roasted garlic cloves we use it again for frying which we insert it in eggplant while roasting process.

Meanwhile chopped all vegetables.

Heat the pan put oil in it when oil is heated add cumin seeds & garlic stir fry.

Saute for a minute then add grated ginger & chopped green chillies stir fry.

Add chopped onion in pan then cook till it becomes golden brown.

Add all spices like red chilli powder & turmeric powder then add chopped tomato mix well stir fry it.

Add green peas & cook well till it becomes soft.

Now add Baigan Bharta in it add salt mix well then add lemon juice & garam masala mix well.

Stir fry then garnish with fresh green corrainder leaves.

Serve hot.
