Sweet Mango Wraps (Amer patisapta)

Peel the mangoes and cut into pieces. Blend the mango pieces to make a smooth pulp.

Boil the milk and gradually add half of the semolina and half of the sugar. Finally before removing from the flame add 2/3 of the mango pulp and stir gently. Remove from the flame and allow to cool.

Now mix up the remaining sugar and semolina with the flour adding water. Add the remaining mango pulp into the batter.

Now heat a tsp of oil in a frying pan and spread out the oil around the pan. Put a scoop of the batter, spread around and allow to get cooked. Add 2-3 tbsps of the mango-milk pulp in the middle.

Now wrap both the sides of the pancake and turn about. Fry the reverse side till it becomes crispy.

Remove from the pan and repeat the process for making more wraps. Serve hot.
