Put quinoa with 1 cup water in pot and bring to a boil. Reduce to a simmer and let cook for 15 minutes

While the quinoa is simmering, heat the olive oil over medium-low heat and saute the garlic and onions until translucent. Season with salt and pepper.

A couple of minutes before the quinoa finishes cooking, add the spinach and Cajun seasoning to the onions and garlic and saute, stirring constantly.

When the quinoa finishes cooking, add it to the pan with the onions and spinach. Stir to combine, adjust seasoning to taste.
