It's my mother's birthday today. And "Pishori Kenya" pilau remains her favourite meal.

Put the pilau masala and whole pilau mix in a bowl, add a little water to soak and wait till ready to use

Cut the meat and boil till tender

Add oil, add onions, cook till brown

Add the garlic and ginger, cook well avoid them burning. Add the soaked pilau spice, add tomato paste and the potatoes. Cook for 5 minutes.

Now measure the water to add to the potatoes, 1 cup of rice to 1.5 cups of water. Add salt and Bring to boil. Wash the rice now and add in. Stir and place a lid and cook in low heat.

Now it's ready to remove from fire.

Place some wet brown paper or newspaper on top, place a lid and put hot charcoal on it. Let it rest for 15 minutes.

After the 15 minutes, remove the lid and the brown paper, check for crusty rice and remove it (kids love this, don't throw away 😋). Prepare your Kachumbari now.....

Now serve the Pilau. Enjoy with a cold drink and a banana. Bon appetit 😎
