Sieve the dry ingredients, flour, baking powder, mixed spices

In a separate bowl put sugar

Add margarine

Mix thoroughly till they're finely incorporated

Add the eggs bit by bit

As you sprinkle in the sieved flour to avoid cuddling

Add the lemon rind and mint essence

As you fold it in one direction

Add the trickle (dark brown melted sugar)gives your cakes a unique color

Fold them into the flour

Grease the baking tins with margarine then insert the parchment papers into them

Add the sultanas pour the dough into the baking tins

Put them in the oven to bake for 60- 90minutes

Don't over crowded them but instead overlap to allow even distribution of heat

Once ready remove them from the oven

And let them cool before the icing and decoration process

You can use this spirit level to ensure they're are of the right level and the outcome is perfect once the gel in it is at the centre when placed on top of each cake

Cramb coat the cakes then cover them nicely with the fondant
