Heat oil in a frying and fry all vegetables one by one accept tomato and capsicum.

Take a bowl, combine curd, all powdered spices and 2 tablespoon of oil in it and mix it well.

Now heat oil in a pressure cooker, add cumin seeds, black cardamom, green cardamom, pepper corn, star anise and cinnamon stick and allow it to splatter.

Now add curd mixture in it and cook it for 2-3 minutes by stirring it continuously on low flame.

Now add all fried vegetables, tomatoes and capsicum in it and stir it well.

Then add soaked rice and cook for a minute or two then add water as per the need and cook it for one whistle.

Now allow pressure cooker to release it's pressure then add ghee in it and mix it well.

Your vegetable yakhni is ready to serve now.
