Ingredients

1 hour
4 servings
  • 1 cupbasmati rice(washed and soaked for 1/2 hour in water)
  • 2 1/2 cupwater for boiling rice
  • 4cloves
  • 2bay leaves
  • 4cardamom pods
  • 2 tbspghee
  • 4-5 strandssaffron(mix it in a tbsp of milk and keep aside)
  • 2 pinchorange food colour (optional)
  • 2 tbspgrated coconut
  • 1/4 tspsalt
  • 1 cupmilk
  • 1/4 cupwater for making syrup
  • 1/2 cupsugar
  • Few drops of rose water or kewra water
  • 2 tbspchopped cashews
  • 2 tbspchopped almonds
  • 2 tbspraisins

Steps

  1. 1

    Boil 2 1/2 cup water in a thick bottom pan, add salt,2 cloves, 2 cardamom, 1 bay leaf, saffron, food colour and soaked rice. Give it a nice stir and cook till 3/4th done. Remove excess water and spread rice in a big plate.

    Now mix 1 cup of milk,1/4 cup water and 1/2 cup sugar in a pan, give it a boil and keep this syrup aside.

    Heat tawa on medium flame. Place a non stick pan or a heavy bottom pan over it.

  4. 4

    Heat ghee, add cloves, cardamom, bay leaf and dry fruits and grated coconut, saute for few seconds.

  5. 5

    Now add milk and sugar syrup, give it a nice mix.

  6. 6

    Add cooked rice, remember we do not want to break rice grains so, mix it gently.

  7. 7

    Cover it with a lid and cook till all the moisture evaporates and rice also gets cooked properly.

  8. 8

    Garnish with some nuts and serve hot.
