Ingredients

About 60 pieces
  1. 1 1/3 cupsmelted unsalted butter (about 300 grams)
  2. 1 cuppowdered sugar (about 110 grams), plus more for dusting
  3. 4 3/4 cupsall-purpose flour (about 600 grams)
  4. 1/2 teaspoonbaking powder
  5. Zest of 1 lemon
  6. Zest of 1 orange
  7. Zest of 1 mandarin
  8. 2 tablespoonsbrandy (about 30 ml)
  9. 1 cupunsalted shelled pistachios (about 130 grams)

Prep 40 min + Bake 20 min

    Add the melted butter and 1 cup (110 grams) powdered sugar to the bowl of a stand mixer. Beat on high speed for 15-20 minutes, until the mixture is smooth and fluffy. Gradually add the flour, baking powder, and citrus zests, lowering the speed as you mix. Finally, add the brandy and pistachios and mix until just combined.

    Preheat the oven to 340°F (170°C). Shape the dough into small round cookies and place them on a large baking sheet lined with parchment paper.

    Bake for 15-20 minutes, until lightly golden. Remove from the oven and let cool completely. Dust a serving platter with powdered sugar, then layer the cookies on top, sprinkling each layer generously with more powdered sugar.

    The secret to delicious kourabiedes is using aromatic butter, which fills your home with the scent of Christmas. The butter should be thick and at room temperature. Melted butter made from sheep's and goat's milk gives every traditional holiday sweet its wonderful aroma.
