Preheat oven to 450 degrees.

Combine lemon juice, olive oil, salt, rosemary, thyme, & pepper in a small bowl & mix well.

Cut potatoes into chunks, peeling first, if desired. Combine potatoes, carrots, garlic, & mushrooms in large bowl.

Add 2tbsp of lemon juice mixture & toss until everything is coated.

Cook vegetables in oven for 30 minutes.

Dip chicken brests in remaining lemon juice mixture & place chicken on top of vegetables. Pour any leftover lemon juice mixture over chicken.

Reduce heat to 375 degrees.

Bake for an additional 25 minutes.

Let set for 5 minutes. Serve.
