This is just a twist of the normal omelette..

Peel, wash and slice the potatoes into thin slices plus the onions

Heat enough oil in a pan then fry both onions and potatoes
- 3
Beat eggs, add a little salt and mix with the potatoes then shallow fry on low heat till cooked completely
- 4
When turning the eggs, use a plate as in put it on top of the pan then turn the eggs onto the plate then back to the pan
- 5
Serve while hot
