Ingredients

  1. 8 oz.Whole Wheat Spaghetti
  2. 1 C.Butternut Squash, diced
  3. 1 C.Zucchini, diced
  4. 1/2 C.Mushrooms, diced
  5. 1/4 C.Onion, diced
  6. 1 tsp.Fresh Garlic, minced
  7. 1 (15 oz.)Can Tomato Sauce
  8. 1/2 (15 oz.)Can Diced Tomatoes
  9. 1 Tbs.Fresh Cilantro, minced
  10. 1/4 tsp.Salt
  11. 1/8 tsp.Pepper

Steps

  1. 1

    In a pot, boil water for spaghetti. Once ready, add pasta and cook per pkg. directions.

  2. 2

    In a large skillet, spray a little olive oil. Then add squash, zucchini, onion, mushrooms and garlic. Cook on medium heat until veggies are tender.

  3. 3

    Turn heat to med-low, then add tomato sauce, diced tomatoes, cilantro, salt and pepper. Mix together well, let simmer until pasta is done.

  4. 4

    Drain pasta well. Place spaghetti on plates. Top with sauce. Enjoy!
