The word esquite comes from the Nahuatl word ízquitl, from icehqui, meaning 'to toast (on a griddle).' Every region of the country has its own version. I’ve seen them made this way in some towns and I love it!

Lime, vegan chipotle mayonnaise (for a dairy-free or vegan version)

Heat a griddle or skillet. Add the corn kernels and epazote, stirring constantly for a couple of minutes.

Add salt, mix, and cover so they cook in their own steam.

Stir occasionally and cover again until the corn is fully cooked.

Serve and add your favorite toppings.
