Serves 4 servings
  • 3 cupswhite or field corn kernels (not too young, or they’ll stick) (about 450 grams)
  • 2 sprigsepazote, thinly sliced
  • Salt, to taste
  • Toppings
  • Lime, mayonnaise, cheese, chili powder
  • Lime, vegan chipotle mayonnaise (for a dairy-free or vegan version)

Steps

10 minutes
  1. 1

    Heat a griddle or skillet. Add the corn kernels and epazote, stirring constantly for a couple of minutes.

    Add salt, mix, and cover so they cook in their own steam.

    Stir occasionally and cover again until the corn is fully cooked.
