Ingredients

1 teaspoonherbs de provence
5 poundsyukon gold potatoes
4 clovesgarlic
8 tablespoons (1 stick)non-dairy butter
1 teaspoonpepper
1 teaspoonsea salt
1/2 cupfresh chives (chopped)
1 cupalmond milk

Steps

Peel and cut potatoes into 1 inch chunks

Bring water to a boil in a large saucepan
3

Add potatoes and boil for 25 minutes
4

Combine garlic, butter, almond milk, pepper, salt & herbs de provence in small saucepan and saute on low heat
5

Drain potatoes and mash well
6

Combine potatoes with non dairy butter mixture
7

Top with chives
