Ingredients

  1. 3 cupsdiced broccoli heads
  2. 3carrots peeled and diced
  3. 6medium potatoes peeled and cubed into small pieces
  4. 1small onion, chopped
  5. 8 cupsChicken Broth
  6. 4 tablespoonsbutter
  7. 1/3 cupall purpose flour
  8. 3 1/2 cupsmilk
  9. 4 cupsshredded Cheddar cheese
  10. 1 teaspoonsalt
  11. 1/2 teaspoongarlic pepper
  12. 8 slicesbacon cooked and chopped

Cooking Instructions

  1. 1

    In a large pot, combine chicken broth, carrots, potatoes, and onion. Bring to a boil, cover and simmer for about 10 minutes.

    Add broccoli, cover and simmer for an additional 10 minutes.

    While simmering, melt butter in a large sauce pan. Whisk in the flour and cook for another minute (or until golden brown). Whisk in milk and cook for an additional 5 minutes until the sauce thickens.

    Add cheese and stir until it is all melted. Pour cheese sauce into the large pot and stir until well combined.

    Add salt and garlic pepper. Add bacon pieces to the soup.

    Serve warm. Enjoy.

Wow great. I used this and improvised. I boiled the potatoes first. Left the skins on. Used the crockpot on a 4 hour setting. Used Veggie broth. Added a few chopped Brussel sprouts. Cooked a little garlic in the stick of butter then added the flour and stirred that in for the last 30 minutes ish. Will save this. Thanks 👍
