Peel and cut potatoes into 1 inch chunks

Bring water to a boil in a large saucepan

Add potatoes and boil for 25 minutes

Combine garlic, butter, almond milk, pepper, salt & herbs de provence in small saucepan and saute on low heat

Drain potatoes and mash well
- 6
Combine potatoes with non dairy butter mixture
- 7
Top with chives
