Heat oil in pan

Add ginger and fry for 30 seconds, then add garlic and dried peppercorns

Add the dried chili and ground pork

When pork is cooked, add the hot bean paste and mix well

Add the chicken stock and let simmer for a minute. Then add cornstarch mixture and stir

Add tofu and mix and let simmer for the tofu to absorb flavour

Taste the sauce and season
