In a large non stick pan, dry roast the sesame seeds for 2-3 mins.
When you papaya a few seeds, it should be crunchy.
over roasting will turn it black and it tastes bitter.
Pulse the roasted seeds in a mixer for a minute.
in the same pan, add jaggery and water.
Bring it to a boil making sure the jaggery is melted completely.add ghee and incorporate well. - 2
Add Chai Masala and the powdered sesame seeds.
Keep stirring well until it comes together like a big mass and leaving the sides to pan.
immediately transfer into a greased plate and spread it evenly using the back of a spoon or spatula.
if the mixture starts to stick, dip a teaspoon in melted ghee and this helps the mixture to spread and also creates a glossy effect. - 3
Sprinkle Almonds as required and press them using the back of a spoon.
Allow it to cool for 30 mins and cut into squares. - 4
