I love fried matumbo but this matumbo stew was delicious! One of the old recipes

Thouroughly wash the matumbo to remove dirt and residue. Boil the matumbo for several hours until it becomes soft

Heat pan with oil, add onions and cook until browned
- 3
Add tomatoes cook until paste like. Add salt and paprika, cook a few minutes
- 4
Add the boiled matumbo let cook until everything is mixed well
- 5
Add 1/2 cup water and royco. Cook until stew has thickened
- 6
Serve with ugali or chapati
