Oven baked orange peel, salt and parsley crusted cod. Served here with tenderstem broccoli, asparagus tips and buttered new potatoes.
Steps

Peel three oranges and chop peel to small pieces.

Put peel in the blender and hand squeeze the juice of one orange in there.

Add a handful of salt.
- 4
Pulse before adding a handful of chopped parsley.

Mix well.

Add the cod fillets to an oven proof dish.
- 7
Top with orange peel mixture.

Drissle with olive oil before putting into a preheated oven. 20 minutes on 180 degrees for a fan oven.

Take out the oven and serve.
