The objective is to make the potato have even little slots. As it bakes the skin tightens and it opens like a fan, allowing heat to penetrate the potato. This creates a crispy skin and a soft centre.

The trick is to use a large spoon - metal or wooden. You place the potato in the spoon and then use a knife to make the slots

Mix in a bowl with olive oil, salt and a little pepper. You can use Parmesan cheese here too if you like.

Bake in the oven for 35-40 minutes at 200 fan, turn up to 220 for 5-10 minutes at the end for crispy skins
