Pour about ¼ cup of wine vinegar in to a cup or ramekin.
Add the salt and sugar then stir well to dissolve. Drop in the peppercorns and allspice berries - 2
Cut the onion into 6mm (approx. ¼ inch) slices

Scald off a jar of at least 500ml (1 pint) and add the onion. Pour in the sugar, vinegar, peppercorns, and salt mixture

Top up with enough red wine vinegar to cover, and close. Allow to sit at room-temperature for at least 30 minutes before using

The longer it's left, the better it will taste. They should last for at least a couple of weeks in the refrigerator
