Chop the mushrooms, dust with cornflour and make sure it’s covered. Fry for 5-7 minutes until cooked and scoop back in a bowl and clean the frying pan.

Chop the garlic and ginger finely and fry with some oil.

Add the chopped onions and fry until brown the sprinkle over the sugar.

Put one tablespoon of cornflour in a bowl, mix with the soy and rice wine.

Add the cornflour mix to the onions and reduce down until sticky. Re-add the mushrooms and make sure they’re coated with the sauce.
