Preheat oven at 160 degrees and line 2 baking tins 8".

Soak the raisins in brandy n set aside

Measure and assemble all ingredients in your working area

Mix oil,sourcream,vanilla,eggs and zest together

Add sugar n whisk

In a separate bowl sift together flour, spices,bicarbonate of soda,salt.

Combine the dry ingredients with the wet and mix well

Add the raisins

Add coconut

Add the grated carrots n mix well

Pour in the prepared tins

Bake for 40-50 mins till a skewer comes out clean

Cool in a wire rack before decorating.

Melt the chocolate chips n drip on the cake covered with whip cream

Pipe patterns as you desire
