Ingredients

  1. 3 cupsground nuts, any variety
  2. 3egg whites
  3. 1/2 cuporange juice

Steps

  1. 1

    Preheat oven to 180C or 350F

  2. 2

    Prepare cookie sheet (the cookies will stick! I used aluminium foil to line my sheets but had to peel the cookies off very carefully. Would suggest parchment paper or glass tray)

  3. 3

    Use preground nuts or grind your nuts

    Add egg whites

    Add orange juice

    Mix ingredients together

    Place spoonfuls of mixture on prepared cookie sheet

    Bake at 180C or 350F for 20 minutes

These were surprisingly tasty. I made them with vegan egg white replacer (made with potato protein isolate) and they came out perfect and were a welcome addition to my diabetic husband's diet. Thank you.
