Ingredients

  1. 1 cuprava / sooji
  2. 1 cupcurd, sour
  3. 10whole cashews
  4. 1/2 tspEno fruit salt
  5. 1 tspmustard seeds
  6. 1/2 tspurad dal
  7. 1 tspcumin seeds
  8. 1/2 tspchana dal
  9. 4 tspoil
  10. 10curry leaves
  11. 1 pinchhing / asafoetida
  12. to tasteSalt
  13. As neededThinly Sliced carrots
  14. As requiredwater

Steps

  1. 1

    Take 4 tsp of oil.
    add in mustard seeds, cumin seeds, urad dal, chana dal, curry leaves and hing.

  2. 2

    Allow it to splutter.
    then add ginger, chilli and saute till raw smell goes away.

  3. 3

    Add broken cashews
    now add rava and roast for 3 minutes.

  4. 4

    Allow it to cool down.
    once completely cooled and add curd and mix well.

  5. 5

    Add 1 - 1½ cup of water little by little (as required).

  6. 6

    Form idli batter consistency.
    add salt to taste and mix well.

  7. 7

    Keep aside for some time. (approx. 20 mins).

  8. 8

    Now add eno fruit salt and mix till it turn frothy.

  9. 9

    Grease the plates with oil and
    pour the batter into the idli moulds, decorate with sliced carrots and Coriander leaves

  10. 10

    Steam it for 10 mins.

  11. 11

    Allow it to rest for 5 mins then unmould.

  12. 12

    Serve hot with any chutney of your choice.
