Ingredients

Serves 4 to 6 servings
  1. 14 ozBeaufort cheese (about 400 grams)
  2. 14 ozComté cheese (about 400 grams)
  3. 7 ozGruyère cheese (about 200 grams)
  4. 1 cupdry white wine (about 8.5 fl oz or 250 ml) plus 3 1/2 tablespoons (about 1.7 fl oz or 50 ml)
  5. 1/4 cupkirsch (about 2 fl oz or 60 ml)
  6. 1 teaspooncornstarch
  7. 1 pinchground nutmeg

Steps

    Pour 1 cup (250 ml) of dry white wine into a saucepan. When it starts to simmer, add the cheeses cut into small cubes. Melt over medium heat, stirring constantly.

    In a separate bowl, mix the remaining white wine, cornstarch, nutmeg, and kirsch. Stir well.

    Add the cornstarch, wine, and kirsch mixture to the melted cheese. Stir to combine.
