Vegetable dumplings/Pitha

Winter is the perfect time to eat these scrumptious dumplings as they are tasty and loaded with lots of veggies. Compliment best when serve hot with lipsmacking spicy green chutney. These dumplings are my childhood favourite and I always wait for the winter time so that I could get a chance to have them.

First of all preheat a pan add 1.5 cup water, add salt, cover and give it a boil. Next take rice flour in palm and spread over boiling water and repeat until last flour. Flame should be low and cover with lid, turn off the flame after 5 minutes

After 5 minutes mash the flour dough and try to knead, do it carefully as it's hot. After kneading well keep it aside.

Now wash, clean and chop all the veggies and set aside.

Now preheat a pan woth oil. Add all the veggies and little bit of salt and saute. Cover it to cook well, after few minutes open the lid and mix again. Now after 5 minutes, saute and add termuric powder, red chilli powder, check salt and fry of few more minutes.

Now it's done allow it to cool and transfer it to a bowl. Now take the dough and make balls. Now yake one ball and by using your finger in circular way try to make bowl shape, make a cavity for veggies. Now place it in your palm and fill the stuffing.

Now fold it, seal the corners and give loop design at the end point, use little bit of rice flour in your hands for better gripping. Now repeat the process to make other dumpling.

Now take idli pot and add water, give it a boil. Grease the idli stands and place 6 dumplings. Place it and syeam them fir 15-20 minutes. When it's done take them out.

Serve hot with your favorite dip, sauce or green chutney.
