Chicken Croquettes with Chickpea Flour

These are classic chicken croquettes made with chickpea flour. This is our homemade version, which also uses some of the broth from cooking the chicken (see my recipe for chicken and vegetable broth).

These are classic chicken croquettes made with chickpea flour. This is our homemade version, which also uses some of the broth from cooking the chicken (see my recipe for chicken and vegetable broth).
Steps

Heat a drizzle of olive oil or a little butter in a skillet.

Finely chop the onion and sauté with a pinch of salt.

Finely chop the chicken and/or meat and carrot, making sure there are no bones. When the onion is translucent, add this mixture and stir.

Add the chickpea flour and cook over medium heat, stirring often, until lightly toasted. Meanwhile, warm the milk with the broth in the microwave until hot but not boiling.

Add the milk mixture and continue stirring over medium-high heat until the liquid is absorbed and the dough starts to pull away from the pan easily.

Taste and adjust the salt. Remove from heat and spread out the mixture. Let cool for 4-6 hours covered with plastic wrap, or you can shape them right away.

Shape the croquettes, dip in beaten egg, coat with breadcrumbs, fry, and serve!
