Ingredients

  1. 4 cupsparsley, finely chopped (about 240 grams)
  2. 2 cupstomatoes, finely chopped (about 300 grams)
  3. 1 cupfresh mint, chopped (about 40 grams)
  4. 1/2 cupgreen onions, finely chopped (about 50 grams)
  5. 1/4 cupfine bulgur (about 40 grams)
  6. 3/4 cupolive oil (180 ml)
  7. 1/2 cupfresh lemon juice (120 ml)
  8. 2 teaspoonssalt
  9. Tomato roses, for garnish

Steps

  1. 1

    Rinse the bulgur and soak it in lukewarm water until it softens. Then drain and squeeze it by hand to remove excess water.

  2. 2

    In a large bowl, combine all the prepared ingredients. Add the lemon juice, olive oil, and salt to taste. Adjust the amounts as you prefer.

  3. 3

    When ready to serve, mix well. Serve with lettuce or cabbage leaves.

  4. 4

    Garnish with tomato roses or as you like.

  5. 5

    Note: Be sure to wash and dry the parsley and mint thoroughly before using.
