Ingredients

2 people
  1. 2-3 cups(thick) Poha (flattened rice)
  2. 1 pinchasafoetida
  3. 1 teaspoonmustard seeds
  4. 1-2green chilies (chopped)
  5. 1onion sliced
  6. 1potato (small dice)
  7. 1/2 cuppeanuts or cashews
  8. 3/4 teaspoonturmeric
  9. 4-5curry leaves
  10. Salt
  11. Fresh lemon (to squeeze at end)

Steps

  1. 1

    Soak the Poha for 5 mins then drain it (You can also add little amount of salt and turmeric while soaking and mix well)

  2. 2

    Heat oil in a pan.Add asafoetida, then mustard seeds. As soon as they crackle, add diced onion and green chilies. Fry until translucent.

  3. 3

    In parallel, heat diced potatoes in microwave for ~2 minutes to partly cook them. Add turmeric and curry leaves to hot oil once onions are done. Add nuts. Add heated potatoes. Sauté until potatoes are done. Add Poha and salt and mix thoroughly. Cook for 3-4 minutes.

    Note: You can shallow fry cubed potatoes as well as fry nuts too before.

  5. 5

    Squeeze lemon at last and serve with love 💕
