Ingredients

30 minutes
  1. 2Indonesian bay leaves
  2. Other:
  3. Paste:
  4. 1bit of oil
  5. Chicken powder
  6. Pepper
  7. Salt
  8. 65 mlcoconut cream
  9. 2 litreswater
  10. 200 grambeef, cut into cubes, boiled
  11. 1lemongrass, smashed
  12. 2 cmgalangal, smashed
  13. 2 cmturmeric, peeled
  14. 6garlics
  15. 10shallots
  16. 50 gramslong beans, cut into 2 cm
  17. 1large chayote, cut into 1 cm length
  18. 150 gramsraw jackfruit, cut into cubes

Steps

30 minutes
  1. 1

    Make the paste by using a blender or traditional mortar and pestle until smooth and thick.

  2. 2

    Add the oil in a pan. Add the paste. Then fry until fragrant, add in the bay leaves, lemongrass and galangal. Keep stirring.

  3. 3

    When the paste turns darker in colour and it doesn't smell raw anymore. Add in the water.

  4. 4

    Simmer and keep stirring, then add in the beef and jackfruit, stir for about 5 minutes, then add in the rest of the veggies.

  5. 5

    Add in the seasonings and coconut cream. Keep stirring. Taste test.

  6. 6

    After everything is cooked, turn off the heat and serve.
