Ingredients

  • 500 gramscarrots
  • 1/2 cupmustard oil
  • 2 tbsplemon juice
  • 1 tspturmeric powder
  • 2 tspred chilli powder
  • 1/2 tspasafoetida (hing)
  • 1 tspcarom seeds(ajwain)
  • 2 tspFenugreek seeds (mathi dana)
  • 2 tspcoriander powder
  • 2 tspFennel seeds
  • 2 tspnigella seeds (kalonji)
  • 2 tspmustard seeds
  • 1 tspdry mango powder
  • to tasteSalt

Steps

  1. 1

    Fast peel and cut the carrots in to long thin pieces put the carrots in the sun light till 1hour

  2. 2

    Heat the pan to roast spices like mustard seeds, fenugreek seeds and fennel seeds now make a coarse powder.

  3. 3

    Heat the pan and heat oil and asafoetida in it.

  4. 4

    Take a carrots in a big bowl add all masala and coarse powder, oil,dry mango powder, lemon juice and salt and mix it well now put in a sun light for 2 days

  5. 5

    Now carrot pickle is ready to eat.
