Prepare your calamari. Clean it and remove any membrane. A good fish monger will have them ready done :) slice into rounds

Bring oil gently to the boil in a large pot or wok. Not too hot. In batches, very important, too many cooking at same time means they won't crisp up, add calamari to flour, shake off excess flour

Then fry until golden brown, always in small batches, for 4-5 mins until lovely and lightly brown. Drain on kitchen paper. Finish the batches, then serve with lemon and salt:)
