Cauliflower Mac and Cheese

Some of my family members are on the keto diet. My brother showed me how to make this macaroni and cheese substitute and I put my own spin on it. Now we eat this at least two to three times a month. Sometimes we even add broccoli! Bacon, cauliflower, broccoli, cheese. What's better than that?

Saute your cut up cauliflower for about 10 to 12 minutes in olive oil on medium-high heat with salt and pepper.

Add cream cheese, cheddar cheese, and mozzarella to a pot on medium-low. Slowly add the heavy whipping cream and start stirring until it forms a creamy sauce. The sauce should coat your spoon as you pick it up. If your sauce is a bit thin add a little more cheese. If your sauce is too thick add a little bit more heavy whipping cream.

Add your cooked cut-up bacon to the cauliflower and put it all in a baking dish. Pour your cheese sauce on top and mix it in

Top the dish with all of the remaining cheese and bake in a 400-degree oven for about 20 to 30 minutes until the cheese is bubbly and melted.
