Seffa is a classic Algerian and Moroccan dish that families love to prepare and decorate, especially for gatherings and special occasions.

Place the fine couscous (seffa) in a large bowl. Add water, then drain it in a strainer. Mix in 2 tablespoons of oil. In a pot, bring about 4 cups of water (1 liter) to a simmer over medium heat. Steam the couscous over the pot. Transfer the couscous to a large bowl and sprinkle with water.

Repeat the steaming process two or three times, depending on the couscous type, adding 1 teaspoon of salt. For the final steaming, add raisins that have been soaked in orange blossom water.

After the last steaming, transfer the hot couscous to a large bowl. Add butter to taste (for example, use 3.5 oz butter (100 grams) for 25 oz couscous (700 grams)). Mix well until the butter is fully melted. Place the couscous on a serving platter and decorate with the available toppings as you like.
