My great grandmother handed this down,along with the reasoning behind why did she always serve this up as stuffed peppers when I was small. It uses sliced peppers! I was so confused when I seen a real stuffed pepper for the first time. But this version she explained was how they could get the flavor of stuffed peppers but make it stretch much further. Guess when? During the depression era. My son thought up this name we now call it. Depression peppers. And inadvertently my grandmother passed along a simple to make inexpensive and tasty meal that everyone I've served it to loves it. Hope you do as well.

Ingredients

  • 2 lbshamburger (rolled into balls)
  • 2large cans whole tomatoes with the juice
  • 4large green peppers sliced
  • Boiled potatoes (what you need and keep separate)

Steps

    Pour cans of tomatoes with juice into Dutch oven or large kettle, add meatballs and peppers. Salt and pepper to taste. Add about 1-2 cans of water. Bring to a boil cover and simmer for about 1 hour. Mash the boiled potatoes on your plate and pour the juice over it and scoop the rest on your plate. Eat and enjoy!
