Quick and tasty. Ideal served with fluffy basmati rice (which I didn't have when cooking today!).

Quick and tasty. Ideal served with fluffy basmati rice (which I didn't have when cooking today!).
Steps

Separate and wash the Pak Choi removing any dirt.

Peel ginger and slice into fine strips (julienne)

Slice beef into thin strips (these will cook quickly and will be tender). Drizzle with a little vegetable oil.

Add beef to a hot frying pan. Keep stirring for 2 to 3 minutes.

Add ginger to the pan, cooking for 1 more minute.

Add a generous splash of soy sauce to the pan and the Pak Choi, stirring for 2 more minutes. They should be wilted but not too floppy!

Serve with fluffy rice.
